    I thought I would pass this along for those who love chocolate covered nuts, but desire to avoid refined (granulated) sugar.  The following will make milk chocolate (not dark) nut clusters of the nut you choose such as peanut, cashew, pecans, almond, or any other nut you can roast.  The milk chocolate is sweeten with Stevia.

    You will need only two ingredients…

    1 pound of raw nuts you want
    2 9oz pkgs of Bake Believe Chocolate Melting Wafers (see photo) of pkg below.

    Preheat oven to 350 °F
    Place raw nuts in single layer on a large cookie sheet with borders
    Cook nuts for 15 minutes
    While nuts are cooking, line a large (or 2 smaller) cookie sheet with wax paper. I use tape to hold the wax paper in place.
    Also while nuts are roasting, place the chocolate melting wafers in a large mixing bowl and spread to an even thickness of the wafers.
    When the nuts have cooked 15 minutes, immediately pour the hot nuts on top of the chocolate wafers. Stir gently with a large spoon as the heat from the nuts melts the chocolate. Keep stirring gently until all the wafers are melted, all the nuts are covered with melted chocolate, and the melted chocolate has a smooth and shinny look (when first melting the chocolate will appear grainy and needs to keep melting).
    Once the chocolate covered nuts are coated and shinny spoon onto the wax paper by tablespoon size which will make a nice size piece of candy.
    Let cool at room temperature in an air conditioned room (~75 °F).

    Makes about 60 pieces of candy and I estimate each piece to be about 50 – 75 calories.

    PS. I find Bake Believe Chocolate Melting Wafers at many grocery stores and at Walmart.
