I would like to delay the latest major update. On May 20, I set my delay for 30 days, until June 19. After the 19th, I assume it will start updating. How can I avoid this?

Patch reliability is unclear. Unless you have an immediate, pressing need to install a specific patch, don't do it. |

I would like to delay the latest major update
If by Major update you mean May 2020 Feature (2004) update and you are on Windows 10 1903, 1909 then you will see a notice for the update with ‘download and install’.
As long as you don’t click on that 2004 won’t install.
On a Pro version you can defer feature update up to 365 days.
