    How do I control which particular style of bulleted/numbered list is applied when I select some paras and hit the Bulleted List/Numbered List icon? I can see neither rhyme nor reason, and it seems to change from time to time.

      The standard recommendation is to avoid the Bulleted List and Numbered list toolbar buttons and the Format | Bullets and Numbering menu item, for precisely the reason you mention: the results are unpredictable. Instead, use the built-in List Bullet and List Number styles or create your own bulleted or numbered styles.
