    Hi,
    I’m confused!
I thought that Windows Version 21H1 came out recently (May 2021), so how come Settings>System>About, (below), shows October 2020?

    Edition Windows 10 Home
    Version 21H1
    Installed on ‎26/‎10/‎2020
    OS build 19043.1052
Experience Windows Feature Experience Pack 120.2212.2020.0

BTW, it is 64 bit O/S

Windows has lately had problems with getting info correct. As you can see from the following you have all the important information as to the version only your date is wonky.

      WinVerSettings
21H1 also still shows as 2009 vs 2104!

      Edition: Windows 10 Pro 64-bit
      Version: 2009	21H1
      Build: 19043.1052
      Installed: 5/24/2021 21:41

The above is from my powershell Get-WinVer script.

      HTH 😎

as PK would say, 2004, 20H2 and 21H1 all have the same core.
the installed date is probably closer to when you installed first.

Have you compared the About output to Feature Updates from Update History?

Your results are probably similar to mine.

I do not know why 21H1 today
      without having (reportely) any prerequisite(s).
      Any observations?

I do not know why 21H1 today

What you got today is the infamous KB4023057.
You can search the site and read lots about this culprit.
