I know I have seen it somewhere but my searches are failing.

How can I get a wider range of colours to shade cells in my spreadsheet?

A workbook can use only 56 different colours, but you can customize the colour palette for each workbook individually, in the Color tab of Tools | Options…
Click a colour in the 56 color palette, then click Modify…
Note that the last 16 colours in the palette are used as the default fill and line colours for charts.
You can import the palette from another open workbook by selecting the workbook from the ‘Copy colors from’ dropdown.

Thanks Hans. Once again – exactly what I was looking for.
