I use Microsoft Office Home and Student 2016.
I wish to create a header in which the title of the document is centered and page x of y in the far right.
How do I do that?

Usually the X of Y page numbering style is an option when selecting Page Number on the Insert tab of Word.
There is another method I use which I like better. Here’s how. Pardon the quick instructions.
o In Word choose the Layout view that has a ruler at the top of the document.
o Select Header from the Insert tab and select Edit header or Custom header.
o With the header selected for editing, note the editable width of the document (margin to margin) on the ruler. For example let’s say it is 7.5 inches.
o Press Alt + H, followed by pressing PG, followed by Alt + T will open the Tabs settings box. In the Tabs box Clear all tabs. In the Tab stop position enter the editable width (7.5” in my above example) as the only tab. Click the Set button to add the tab stop to the list (which it will be the only one). Under Alignment choose Right. When finished click OK. This trick with the tab allows both left and right justification on the same line allowing the Title in the center and page numbers right justified on the right margin.
o With the cursor on the left margin of the header, enter the Title you have for the document.
o Press the tab key which moves the cursor to the right margin.
o Type in Page followed by a space. Press Ctrl + F9 to insert a Field. Right click the Field and select Edit Field. In the Field window that opens scroll down the list of Field names and select Page and press the OK button. This will return to the header with the current page number where the field was.
o After the page number appears enter a space, type of followed by a space. Press Ctrl + F9 to enter a Field. Right click and select edit. Under Field names select NumPages and press the OK button. This returns the total number of pages.
o This will return to the header with the Page # of # shown on the right margin.
o Place the cursor to the left of the title and use the space bar to center the title in the header. Don’t use the Center justify button or it will mess where the page numbers are.
o Close the header and you are good to go.

I’m glad you like that method, but I have had one snag that I haven’t worked out…
I can start the numbering on any page in a long document (such as after the TOC) which yields the correct results (ie page 1 rather than page 6) and the Page field returns the correct results. The NumPages filed will show the total number of pages including the the first 5 I skipped to start the page numbering. I know it requires a formula to delete the first 5 pages from its value, but I just can’t get the syntax correct for the formula to work. Will keep trying.

I did run into a snag the first time I tried it, and I didn’t know why it didn’t complete properly so I started over. The 2nd time it worked but I’m not sure if I followed each step exactly but whatever I did, it worked on the file I wanted to have it work on. WinKey +. (period)

I went back in to see how I can have the title of a document centered in the header. I copied the title of the document into the header, and it landed to the far right up against page X of Y. Pressing the space bar, the title moved toward the center and that was it.
