Is there any way to change the colour that shows when you select a message in the inbox (ie when you click on the message)?

Not in Outlook itself. It’s a Windows setting that can be changed in the Appearance tab of the Display Properties control panel: it’s the color for Selected Items. But changing it will affect all Windows applications.
