    I have for example, a number of Heading 1 formatted paragraphs in this
    document. When I right click on the Style in the Quick Style Gallery I
    now see

    Update Heading 1 to match selection
    Modify
    Select All (Not currently Used)
    Remove All (Not currently Used)
    etc.

    I used to see a number of paragraphs that are using the style instead
    of “not currently used”. What’s up here? If I change the style it works
    on all the paragraphs, but this just looks wrong.

      You need to turn on the “keep track of formatting” feature in order to enable Select All and Remove All:
      – Click the Office Button.
      – Select Word Options.
      – Click Advanced.
      – Tick the check box “Keep Track of Formatting”.
      – Click OK.
      Note: turning on this feature will cause Word to display lots of pseudo styles such as Normal+Bold etc.

        Thanks. That makes sense. I’m not really sure I need/want it on but didn’t know why it changed and I still wonder how it got turned off. Anyway, the pseudo styles , are those sort of temporary styles that capture any ‘non style’ formatting I perform on the document? Are there any other things that option does?

          Yes, when “Keep Track of Formatting” is on, manual formatting applied to text will be listed in Styles and Formatting as if it were a style. The advantage is that you can easily reapply the same manual formatting elsewhere in the document without creating a ‘real’ style. The disadvantage is that you’re likely to end up with a large list of pseudo styles, and that users aren’t encouraged to use real styles.
          I don’t think this setting has other effects than displaying pseudo styles and enabling the “Select All” / “Remove All” options, but others will correct me if I’m wrong.
