I just happened to find by accident that it seems Microsoft have backported the ability to set a default terminal application. It was in Windows 11 from the start but now my Windows 10 22H2 and LTSC 2021 laptops both have the option. Looking online, it seems to have been added in the June update. A nice addition that makes the Windows Terminal app a lot more useful.
