A friend gets an email newsletter from her Athletic Club and the letter shows up in “gibberish” She forwards the email to me and it is fine – all text is in english as it should be on my system.
At the top of the email on the blue title line, it shows UNICODE (UTF-8). I had her change the encoding to Western European ISO but it did not change anything.
I am going to attach a picture of the “gibberish” that shows up in her email and will paste below what shows up on my system. Here is what shows up on my system.

I love what I do! Helping people look and feel healthy, become stronger and live longer, what could be better? I also love talking and writing about what I do.
